64 grams cocoa powder
200 grams sugar
113 grams butter (1 stick)
3 tbsp canola oil or vegetable oil
1 large egg
2 tsp vanilla extract
170 grams all-purpose flour
½ tsp baking powder
a good sized pinch of kosher salt
55 grams semisweet chocolate chips
Prep time: 15 mins
Bake time: 10 mins
Preheat the oven to 350 F (176 C), line 2 cookie sheets with parchment paper.
In a medium bowl, mix together flour, cocoa powder, white sugar, butter and oil. Beat in egg and vanilla until fully incorporated.
Add the flour, baking powder and salt. Stir in the dry ingredients first before mixing them through the wet ingredients until a dough forms (do not over beat). Fold in the chocolate chips.
Scoop some of the dough, and place onto prepared baking sheets. Press them down a little bit.
Bake in preheated oven for 10 -12 minutes. The cookies will come out soft from the oven but will harden up as they cool. (Be careful not to over bake as they will dry out)
Let cool for 10 minutes, using an offset spatula to move the cookies to a cookie rack. Let cool completely then serve.
